Muktagasar Monda (Sweetmeat) মুক্তাগাছার মন্ডা
Origin:
In early 1824, this traditional Monda (Sweet) was made by a person named Ram
Gopal Pal and served in the house of Suryakant Acharya Choudhury, the Zamindar
of Muktagacha in the Mymensingh district of Bangladesh. And the Zamindar was so
amused by eating this Monda that he continued to spread its reputation around.
Since then Monda has held its place as the traditional dessert of Bangladesh in
the hands of the same family. It is said that Ram Gopal Pal got the recipe of
this Monda through sleeping Dream.
Ingredients:
5 kilogram pure cow milk, 500 g sugar, 1 cardamom powder (recipe for making 1
Kilogram Monda)
Preparation:
Strain the milk well and put it in the oven. Simmer on medium flame for 40-50
minutes. Care should be taken that the milk doesn't turn brown. To cook chickpeas
in hot milk, add chickpea water in quantity or add 5 tablespoons of lemon juice
to one spoonful and stir gently for 4-5 minutes. Now when the Milk Chaana is
done, separate it and wrap it in a thin cotton cloth. Now take the Milk Chaana
from the cloth in a big bowl and mix the Chaana well. Now make a vein with
sugar in a pan and stir it with cardamom powder for 1-2 minutes. Then add Chaana
and stir for 10 to 15 minutes on low flame. Now pour the mixed Chaana in a
large bowl and cool it. In a separate container, make small balls of 20/25
grams. Finally, in another bowl, take two pieces of balls and mix them in the desired size and make
delicious Monda.
